- Cook the tomato with a little salt until it reduces.
- Blend it until you achieve a fine consistency and put it to one side.
- Cut the sweet potato into thin slices.
- Put some tomato on top of the sweet potato and bake for 20 minutes at 200ºC.
- Take it out of the oven, add a sprinkling of truffle breakings, sliced parmesan and finish with a little parsley.
